Roasted Cauliflower Pizza Bites
A FUN little project for a quick snack anytime!
Think: all the indulgence of frozen, store-bought pizza bites, without all the overly processed ingredients, sugar, and simple carbs.
I’m telling you… many skeptics will enjoy this recipe, and those pizza cravings will be satisfied!
I LOVE cauliflower SO much that I’m actually in denial that some people don’t like it.
I could eat it every single day in some form, which is GOOD because it helps to keep me healthy.

makes 4 servings
Ingredients:
- 1 large head cauliflower, sliced into flat, disc-like pieces as shown
- 2 Tbsps avocado oil, or extra virgin olive oil
- pinch sea salt
- 1/2 tsp garlic powder
- 1 cup all-natural, pizza sauce, or marinara
- 1/2 cups natural mozzarella cheese
- nitrate-free pepperoni
Instructions:
Preheat your oven to 400 degrees f. and line a large baking tray with parchment paper.
Place your cauliflower over a large cutting board; using a sharp knife, slice it into 1/2 inch discs as shown in the video.
Brush or spritz cauliflower (both sides) with oil.
Lay flat on a large sheet pan.
Sprinkle with sea salt and garlic powder.
Roast in your preheated 400 f. degree oven for about 10 minutes each side, 20 minutes total, flipping once. We want em’ golden brown, and a little crispy!
Remove from oven.
Heat oven to broil.
Place a tiny dollop of pizza sauce onto the center of each cauliflower bite.
Top with a tiny pinch of shredded mozzarella, and pepperoni.
Place your sheet pan back into the oven & broil for 1-2 minutes until your cheese is bubbly.
Sprinkle with dried or fresh basil.
Enjoy!
