Pepper Pizza Poppers
Easy + SUPER YUM snack idea for your week ahead!
How cute are these little poppers?!
Kids are more likely to try new things if we get them involved in the making + cooking process. So don’t forget to use kitchen time as a bonding and learning tool for the children in your home. The rewards are priceless (and tasty!).
Be sure to use YOUR favorite marinara sauce or tomato sauce, because that’s where these lil’ babies get a lot of their flavor!
When shopping for store-bought sauce:
I like to make sure the marinara has no added sugar (tomatoes naturally contain sugar, but added sugar shouldn’t be on the ingredients list).
Marinara sauce or tomato sauce should contain just a few simple ingredients such as tomatoes, garlic and herbs.
Makes about 4 servings
Ingredients:
- 12-14 mini sweet peppers
- 1/2 cup organic marinara or pizza sauce
- 1/2 cup mozzarella, shredded
- 6 slices turkey pepperoni, cut into small circles with a 1/2-inch circle cookie cutter, or sliced into fourths with kitchen shears.
- Optional: 1 tbsp chopped fresh parsley or basil
Instructions:
Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.
Cut the mini peppers in half lengthways through the stems. Gently scrape the seeds out, keeping the stems on.
Arrange your pepper halves, cut side up, onto the prepared baking pan.
Spoon a tiny bit of tomato sauce into each one, then sprinkle with shredded mozzarella.
Top with pepperoni and place the tray into the hot oven.
Bake for 10 minutes, or until the cheese is nice and melty.
Sprinkle with chopped parsley if desired.
Serve immediately and enjoy!
