Here’s a GORGEOUS Weekend Breakfast idea to brighten everyone’s day!

This is a great recipe if you’ve got a bigger group who you want to feed {& impress} on a Saturday or Sunday morning – just double it up!

Banana Split Oatmeal Bowls are very interchangeable as far as the toppings go, so grant yourself full creative and personal freedom to make something your family will LOVE!

“Soaked” oats save a lot of time in the morning, but they’re also much easier to digest than unsoaked oats.

➡  As the oats soak overnight, their digestibility greatly improves, here’s how:

Overnight as they soak, the starches break down which improves digestibility and the natural phytic acid (which all plants contain) is greatly reduced that makes them more easily absorbed by your body!

Yes. These oats are meant to be eaten cold like pudding.

Makes 4 servings

Ingredients

Oatmeal:

  • 2 cups old fashioned rolled oats
  • 2 Tbsp chia seeds
  • 2 1/4 cups unsweetened milk of choice
  • 1/4 cup pure maple syrup, or raw honey
  • 2 tsps vanilla extract
  • 1/4 cup unsweetened Greek yogurt

To Assemble:

  • 4 small bananas
  • 1/3 cup Greek yogurt
  • 1 cup chopped strawberries
  • 1 cup fresh berries of choice
  • 2 Tbsps chopped walnuts
  • 2 Tbsps dark chocolate, melted

Instructions:

To make your overnight oatmeal:

Place all the oatmeal ingredients to a mixing bowl. Whisk well to combine, then cover and allow it to refrigerate for at least 4 hours (or overnight).

To assemble your banana split bowls:

Peel and slice the bananas in half, lengthwise.

Add the banana halves to your bowls as shown.

Add oatmeal in the middle followed by a dollop of yogurt.

Sprinkle with strawberries and fresh berries.

Drizzle with melted chocolate and sprinkle with chopped walnuts.

Repeat with remaining bowls.

Enjoy!
