Watermelon + Feta + Mint Skewers 🌱🍉

Watermelon feta skewers always go really fast, so be sure to make a bunch!

Since there are only a few simple ingredients used here, I really recommend using the absolute freshest, highest quality ingredients you can get your hands on…it makes all the difference.

Feta is Greece’s most famous cheese (and my favorite!) Many say it’s also the healthiest.

🐐Usually made from sheep or goat milk (or a combo), Feta cheese is nutrient-rich. Feta is said to be easier to digest and less allergenic and inflammatory than cheeses made from cow’s milk, which makes it a good option.

💦 Here’s a fun fact: watermelon is 92% water – which means it can help keep you hydrated AND feeling full between meals. It also can aid in digestion.

🍉 Its high water content means it’s lower in calories – but even so, it packs some surprising nutrition. In addition to containing vitamin C, it has carotenoids that convert to vitamin A, as well as lycopene, which has a long list of potential health benefits.

👀 Lycopene has been shown to be protective against certain cancers, heart disease, and age-related vision loss.

🤗 Here are some ways to get more watermelon in your diet: add it to drinks, salads, and smoothies, or just enjoy it as a snack (like this one)!

10 skewers

Ingredients:

  • ½ medium seedless watermelon
  • fresh mint
  • 8 oz feta cheese
  • 10, 6 inch bamboo skewers

Instructions:

Cut your watermelon and feta cheese into 1-inch cubes.

Gently, thread a cube of feta cheese, followed by 2-3 fresh mint leaves, a watermelon cube and so on, until your skewers are threaded to your preference.

Repeat with the remaining ingredients.

Arrange the skewers onto a platter and enjoy!
