Butter-Herb Corn-on-the-Cob
Did you know that you can actually eat fresh sweet corn right off the cob? No cooking required whatsoever. Although, I do recommend trying this recipe with FRESH just-picked sweet corn then boiling it just so the butter is ultra melty and your corn is bright yellow & tender-crisp. An absolute summer treat!
I know corn is controversial when it comes to Clean Eating & health in general, but here’s the thing…
Sometimes it’s just about getting the family in the kitchen and having fun together.
This isn’t something we’re eating every day…more like enjoying it several times throughout the Summer when it’s at its peak sweetness.
My family LOVES Clean Eating, but you might be surprised to know we aren’t super-duper rigid with our eating habits either.
If you’ve been following CFC for a while, then you probably know that we’re pretty balanced over here – in that we do believe there’s a place for *everything* in moderation, so long as we’re choosing the good, healthier stuff MOST of the time.
I try to do my best to teach our kids to ENJOY the process of selecting, preparing and eating food together with loved ones.
A healthy mindset with food means bringing balance into the equation.
Y’all know we’ve gotta have some of this Sweet Corn while we celebrate the last of Sweet-Sweet Summertime because I refuse not to!
Sweet corn on the cob is in season during these last few months of the Summer harvest, and we love to serve it at our BBQ’S during those months.
Try to find a farm locally that grows their own organic corn…or even better, plant a few stalks along your own fence line next summer!

Make your own Homemade Ghee
8-10 servings
Ingredients:
- 2 Tbsps clarified butter or ghee, at room temperature
- 2 Tbsps minced fresh parsley
- 2 Tbsps minced fresh chives
- 1 tsp sea salt, or to taste
- 1/2 tsp crushed chili flakes, or to taste
- 8 ears sweet corn, husked and cut into 2.5-inch pieces
Instructions:
Fill a very large pot with water and bring it to a boil over medium-high heat. Add your corn and boil for just about 5 minutes.
Meanwhile, add the rest of your ingredients to a very large bowl. Whisk the clarified butter or ghee with herbs and seasonings.
Once your corn is done to your liking, carefully drain completely.While corn is still hot, transfer cobs to the bowl with the butter-herb mixture.
Toss well to coat your corn.
Serve immediately and enjoy!
