The Super Carrot {and Rachel’s fave tangy juice recipe below}
We LOVE this veggie in our cooked recipes, but it’s also incredibly beneficial when consumed RAW, to get the most of all its essential nutrients.
So besides adding it to our salads, we like to enjoy carrots by blending them up. Carrot juice is definitely one of the most delicious of the vegetable juices, and this recipe is our ABSOLUTE favorite!

Rachel’s Tangy Blender Carrot Juice Recipe
Makes 2 servings
Ingredients:
- 4 medium organic carrots, peeled
- 1 stalk celery, peeled
- 1 lemon, juice of
- juice of 4 sweet oranges
- 1 inch fresh ginger nob, peeled
- a bit of water if you prefer thinner juice
Instructions:
- Chop the carrots and celery into 1 inch pieces, toss into a high powered blender.
- Squeeze in the lemon, and orange juice.
- Toss in the ginger.
- Blend well until it’s your preferred consistency.
Enjoy!
