Summer FUN, makin’ memories with the kids…using stuff you’ll actually feel GOOD about eating! Makes about 8 servings
Ingredients:
- 2 bananas, sliced into 1.5′ inch pieces
- 1/4 lb. cored pineapple, cut into large bite sized pieces
- 8 small strawberries
- 2 kiwis, peeled and cut into quarters
- 1/4 cup high quality dark chocolate chips/or a bar
- Look for a quality Dark Chocolate, with a higher percentage of cacao (NOT cocoa). The antioxidants are higher…and usually the sugar is lower! For a silkier texture, try melting a Tablespoon of unrefined Coconut Oil right into the chocolate!
- 2 Tbsp chopped peanuts, or almonds
- 8 wooden skewers
Instructions:
- Line a sheet pan with parchment paper.
- To assemble: slide pineapple on the skewer first, then banana, kiwi and strawberry, then place on the prepared sheet pan.
Freeze for about 15 minutes. - How to melt chocolate:
- Place a wide skillet with about an inch of water on your burner.
- Place chopped chocolate pieces in a heatproof bowl (tempered glass), and set the bowl directly in the water.
- Bring the water to a simmer, then turn OFF the heat and slightly whisk the chocolate sit until it is melted.
OR Melt chocolate by heating in the microwave for 30 seconds, stirring and repeating until melted and smooth - Lightly drizzle the kabobs with melted chocolate, then sprinkle with nuts and enjoy immediately or refreeeze for an hour or two until ready to serve.
