A Super Simple, REAL Food recipe…and they are beyond Delectable!

Oatmeal is a COMPLEX carbohydrate, that our bodies use VERY well for sustainable energy.

If your current goal is weight loss and/or overall health, try eating MORE COMPLEX carbohydrates (yams, sweet potatoes, squash, brown rice, quinoa, oatmeal, etc) and LESS SIMPLE, highly processed carbohydrates such as soda, and white pasta.

Oat flour is the simplest flour to make at home, using whole rolled oats (old fashioned oats) and your high speed blender or food processor.

2 cups of whole rolled oats equal about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.

You may have to stop your machine and move the flour around with a spoon.

Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.

Makes 4 servings

Ingredients:

  • 1 small very ripe banana
  • 2/3 cup almond milk, cashew milk, or unsweetened coconut milk
  • 1 large egg
  • 1 tsp unrefined virgin coconut oil
  • 1/2 tsp vanilla
  • 1/2 cup oat flour
  • 1 tsp baking powder
  • 1/8 tsp sea salt
  • 1/8 tsp cinnamon

To serve:

  • pure maple syrup, or raw honey
  • raspberries
  • strawberries

You’ll need:

  • metal heart-shaped cookie cutters, any sizes you choose

Instructions:

Into your blender add the banana together with the milk, egg, coconut oil and vanilla. Process until smooth.

Add the remaining ingredients and pulse for a few seconds more, just until incorporated, do not over-blend!

Preheat a large skillet or griddle over medium heat.

Place your heart-shaped cutters onto the skillet or griddle and lightly spray everything with coconut oil cooking spray.

Fill the hearts halfway up with the batter. Do not overfill as the pancakes may not properly cook in the center.

As soon as bubbles appear on the top of the pancakes, VERY gently and slowly remove the metal heart with the help of a paring knife.

Flip your remaining heart-shaped pancake and cook for 1 minute more.

Repeat with the remaining batter.

You should get 8-10 pancakes, depending on the size of your hearts.

Serve with fresh berries and raw honey or maple syrup.
