Ok CRUSHers, hear me out on this one, OK?

YES. It’s Bacon-Wrapped Corn, you guys!

It might seem a little strange, but this combo is SO good. The bacon grease takes on the role of “buttering” your corn, and also helps it to roast up with lots of flavor!

I know both of these foods are super controversial when it comes to Clean Eating, but here’s the thing…

Sometimes it’s just about getting the family in the kitchen and having fun together.

This isn’t something we’re eating every day…more like once each year!

My family LOVES Clean Food, but you might be surprised to know we aren’t super-duper ridged with our eating habits either.

If you’ve been following CFC for a while, then you probably know that we’re pretty balanced over here, in that I do believe there’s a place for everything in moderation, so long as we’re choosing the good, healthy stuff MOST of the time.

I personally do my best to teach our kids to ENJOY the process of selecting, preparing and eating food together with loved ones.

A healthy mindset with food means bringing a bit of balance into the equation.

We’re not going to be posting a fried Twinkie recipe anytime soon 😂, but ya’ll know we’ve gotta have some of this Bacon-Wrapped Corn while we celebrate the last weeks of Summer because these are REALLY fun to make.

Sweet corn on the cob is in season during these last few months of the Summer harvest, and we love to serve it at our BBQ’S during those months.

Try to find a farm locally that grows their own organic corn…or even better, plant a few stalks along your own fence line next summer!

Our family chooses to include bacon in our meals several times each month…with 6 teenagers, it’s just one of our family favorite foods that we don’t want to give up.

I do try to choose very high-quality bacon that is nitrate-free and humanely raised.

Ingredients:

  • 5 ears local corn, husks, and silks removed
  • 10 thin slices of nitrate-free bacon
  • sea salt and fresh ground black pepper, to taste

Preheat your oven to 375 degrees f. and line a rimmed baking tray with parchment paper. To prepare your corn, peel off the husks and silks, then run your fingers over the cob to pick away any remaining silks. Next, wrap 2 slices of bacon around each ear of corn and place them on your prepared baking sheet. Roast for 15 minutes, then flip the corn over and bake for additional 15-20 minutes, or until corn is tender and bacon is crispy.Keep an eye on them during the last 10 minutes, as they can suddenly close-up quickly. Sea salt and pepper to taste if desired.
