Tangy Grass-fed Beef Lettuce Wraps + Avocado Cilantro Cream Sauce

🥑🌞 I figure we still have a good 6-8 weeks for eating dinners on the patio, and outdoor entertaining.

Let’s enjoy it as much as possible while keeping things SIMPLE with THESE delicious wraps!Makes about 4-5 servings
Ingredients:

  • 1 lb. grass fed ground beef
  • 1 Tbsp avocado oil, or olive oil
  • 1/2 yellow onion, diced
  • 2 cloves fresh garlic minced
  • 1 yellow bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin seed
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • sea salt and freshly ground black pepper, to your taste
  • 1 jalapeno, sliced
  • 1/2 cup chopped cherry or grape tomatoes
  • butter lettuce leaves for serving

Avocado Cilantro Cream Sauce:

  • 1 very ripe large avocado
  • 1/2 cup plain Greek yogurt
  • 1/4 cup packed cilantro with steams
  • 1 jalapeno diced
  • juice of 1/2 fresh lime
  • 1/2 tsp garlic powder
  • sea salt and freshly ground black pepper, to your taste

Instructions:

  1. Place all avocado sauce ingredients into a blender or food processor and process until smooth.
  2. Transfer to a bowl, cover and refrigerate until ready to use.
  3. Heat oil in a large skillet over medium-high heat.
  4. Add onions and bell peppers; cook for 3 minutes. Add fresh garlic and all seasonings, then saute for about 1 minute, finally add the ground beef.
  5. Brown beef, while crumbling, & stirring occasionally for about 5 minutes until cooked through.
  6. Serve beef mixture over lettuce leaves topped with chopped tomatoes, sliced jalapeno and a drizzle of your avocado cilantro cream sauce.
