Strawberry Protein “Nice” Cream Cups aka
Delicious Strawberry Ice Cream snack cups made with only fruit sugars + a punch of protein Happy First Week of Summer 2018! What fun adventures do you have in the works this Summer?
Jason and I are planning our wedding, and hope to go on lots of our favorite hikes with the kids & our dog.
The kids are also begging for another dog …to which we just might agree since there is plenty of space at the new house.

Makes about 6 cups/ small servings
Ingredients:
- 2 frozen bananas
- 2 Tbsps unsweetened almond or coconut milk
- 1 cup frozen, organic strawberries
- 1 tsp vanilla extract
- 1 scoop vanilla protein powder of choice
- 1/4 cup fresh chopped organic strawberries to garnish (optional)
Instructions:
- Add all ingredients to a food processor, or high-speed blender and blend until smooth.
- Fill a silicone cupcake mold with this mixture, then top each cup with fresh strawberries as shown.
- Freeze for about 2 hours.
- Remove from molds.
