The best part is that your actual hands-on prep time is just a few minutes…simply grabbing your ingredients, stirring them together: throw it all into your preheated oven. Done.
So mix up a batch early tomorrow morning, then go shower and get yourself ready while a delicious breakfast bakes up for the family!

This baked oatmeal stays good in the fridge for up to 4 days in a sealed container. Great for meal prep!
Use ANY milk of your choice. My personal preferences for this baked oatmeal are unsweetened coconut milk or unsweetened almond milk.
When shopping for peanut butter I try to make sure peanuts and salt are the only ingredients. Especially steer clear of peanut butter with added inflammatory oils and lots of added sugar.
The sweetness factor in baked oatmeal is such a PERSONAL preference, so please consider this when adding in the maple syrup or honey. Depending on your taste, you may want a bit more or less.
For nut allergies or variety, this baked oatmeal would be wonderful using almond butter or sunflower butter instead of peanut butter.

Ingredients:
- 2 Tbsps clarified butter, ghee, or unrefined coconut oil, melted
- 2 large eggs, room temperature
- 1/2 cup maple syrup or raw honey
- 1-1/2 cups milk of your choice
- 1/4 cup all-natural peanut butter
- 3 cups old fashioned rolled oats
- 2 tsps baking powder
- 2 tsps vanilla extract
- 1 tsp cinnamon
- 1/4 tsp sea salt
To serve:
- fresh strawberries and banana slices
Instructions:
Preheat your oven to 350 degrees f. and lightly grease an 8 x 10 – inch baking dish with coconut oil or ghee.
In a large mixing bowl, add the eggs together with the melted clarified butter or ghee, maple syrup, or honey, milk, and peanut butter.
Whisk well to combine. Add in the rolled oats, baking powder, vanilla extract, cinnamon, and sea salt. Stir with a spatula to fully incorporate.
Pour your mixture into the prepared baking dish and bake for 30 – 40 minutes. Keep an eye on it those last few minutes.
Once the oatmeal is finished baking and just set in the middle, let it cool for a few minutes.
Slice into 8 servings and top with your fresh strawberries & bananas.
