Baked Feta Egg Breakfast
Well, this was SUPER easy and FUN to make while being incredibly luscious to eat!
Our feta egg bake is perfect for the weekend when maybe you have a bit more time to let it bake. But don’t forget: Eggs make a tasty, nutritious/fast Dinner idea too!

Feta is Greece’s most famous cheese (and my favorite!) Many say it’s also the healthiest.
Usually made from sheep or goat milk (or a combo), Feta cheese is nutrient-rich. Feta is said to be easier to digest and less allergenic and inflammatory than cheeses made from cow’s milk, which makes it a good option.

Ingredients:
- 1-pint cherry or grape tomatoes
- 3 cloves fresh garlic, minced
- 1-1/2 Tbsps olive oil, or avocado oil
- 1 tsp dried Italian seasoning
- 8 oz feta block, drained
- 3 large eggs
- sea salt and freshly ground black pepper, to taste
- sliced avocado
- large handful of fresh parsley, or basil, chopped, to garnish
Instructions:
Preheat your oven to 400 degrees f.
Add your tomatoes to an oven-proof baking dish. Stir in the garlic, seasonings, and oil.
Add your feta block in the center of the dish, arranging the tomatoes around it.
Flip your feta several times to get it coated in oil and seasonings.
Bake in your preheated 400-degree oven, for 30 minutes or until the feta is golden and melty.
Remove your dish from the oven and mash and stir the cheese and tomatoes into a smooth sauce using a fork.
Use a spoon to create a little nesting space in the sauce then gently crack an egg into it as shown.
Repeat with the remaining eggs.
Bake for 8-10 minutes, or until eggs are set to your liking.
Garnish with sliced avocado and freshly chopped herbs as desired then enjoy immediately!
