Sautéed Fresh Lemony Spinach

Sautéed Fresh Lemony Spinach

How to Cook Fresh Spinach 🍋🌱🧄

If you’ve ever participated in our Clean Eating Challenge, you know that we eat A LOT of spinach.

There are many, many good reasons for this!

And as much as we enjoy our fresh spinach salads, we often need to mix things up with a beautiful plate of cooked fresh lemony spinach.

Cooked Spinach Benefits:

Spinach that has been heated has it’s very own health benefits! By eating cooked spinach you will absorb higher levels of vitamins A and E, protein, fiber, zinc, thiamin, calcium, and iron than eating your spinach raw. Important carotenoids, such as beta-carotene, lutein, and zeaxanthin, also become more absorbable.

Ingredients:

  • 1-2 Tbsps olive oil, avocado oil, or unrefined coconut oil
  • 24 oz fresh spinach
  • 3 fresh garlic cloves, chopped

  • 1 Tbsp fresh lemon zest
  • sea salt and freshly ground black pepper

Instructions:

Heat your oil in a large heavy-bottomed skillet.

Add in garlic and cook until fragrant, for about 1 minute.

Add in half of your spinach and stir to wilt. Stir in the remaining half of the fresh spinach.

Drizzle in the fresh lemon juice and stir constantly until all spinach is just wilted.

Remove from the heat and season with lemon zest, sea salt and pepper to taste.
