Festive Cucumber Bites 🎄🎁

These Cucumber Bites are so FUN to make with the kids.

I like to call these types of projects a “food craft” because they’re really fun to make together as a family!

Besides being really simple, they’re actually quite tasty with a perfect blend of seasonings & herbs.

➡ Note: My favorite brand of cream cheese is pasture-raised “Organic Valley”.

Makes about 12 servings

Ingredients:

  • 2 large English cucumbers
  • 8 oz grape or cherry tomatoes
  • 1 (8 oz) organic cream cheese, at room temperature
  • 1 small (5.3 oz) container plain Greek yogurt
  • 3 Tbsps fresh dill, minced
  • 2 Tbsps chives, finely chopped
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp celery salt
  • a tiny pinch of sea salt and pepper

Instructions:

In a large mixing bowl, add your cream cheese, yogurt, dill, chives and seasonings. Stir very well to combine.

Add this mixture to a piping bag. Alternatively, you can use a Ziplock type bag with a tiny corner snipped off.

Refrigerate your cream cheese mixture until ready to use.

Just before serving, slice your cucumbers into ½-inch thick rounds.

Slice the tomatoes in half.

Arrange your cucumber slices on a large platter.

Pipe a swirl of cheese mixture onto each cucumber round. Top with a cherry tomato half, cut side down, as shown.

Garnish with freshly ground black pepper.

Serve immediately and enjoy!
