While this Salad Dressing is practically drinkable (it’s just *that* good!), 😋

Don’t drink it, but instead double up the recipe and use it for other salads and vegetables! A GOOD dressing recipe adds a lot of flavor to everything!

Cabbage is a very underrated vegetable. It’s very LOW in calories, HIGH in nutrients and fiber. Definitely a vegetable that we should all be eating more of!

In terms of price per cup, a report by the Department of Agriculture (USDA) has shown cabbage to be the second most economical cooked vegetable in terms of price per edible cup. Yes! Grab you some next time you’re out & about!

Most people don’t know what a powerhouse of a food cabbage really is. I’ve been eating it on the regular for the past 6 years…both in soups and in salads like this 😍

Cabbage is a cruciferous vegetable that increases the production of antioxidant and detoxification enzymes, and stimulates the production of liver cleansing; it actually helps your liver break down toxins so they can be more easily expelled, and it also has diuretic properties help rid your body of excess liquid, carrying toxins along with it

Ingredients:

DRESSING:

  • juice of 2 fresh limes
  • zest of 1 lime
  • 1 large bunch fresh cilantro leaves, stems removed
  • 1 Tbsp raw honey, or pure maple syrup
  • 1 Thai red chili pepper, seeded and chopped
  • 3 fresh garlic cloves, peeled and halved
  • 1/2 tsp sea salt
  • 1/2 tsp ground pepper
  • 2 Tbsps avocado oil, olive oil, or sesame oil

SALAD:

  • 1 head Chinese or Napa cabbage, finely shredded
  • 1/2 small head red cabbage, finely shredded
  • 2 medium ripe avocados, peeled and sliced
  • 1 cup shredded carrots
  • 3 green onions, sliced on diagonal

Instructions:

Place all of your dressing ingredients into a food processor or high-speed blender and pulse until smooth. Alternatively, you can mince the cilantro, pepper and garlic and whisk everything in a small bowl.

Add all of your prepped and sliced veggies into a large salad bowl.

Drizzle your dressing on top, and toss salad well to evenly coat.

Serve immediately and enjoy!
