It’s easy to fill up on heavy foods this time of year…they are everywhere!

It’s almost surprising when someone brings a fresh, bright salad to a Christmas party!

I dare you to surprise them!Yep, seriously. Bring your own food. If you are going to a party, or family function, then bring your own GOOD foods!Set yourself apart and show the world you CARE about what you put into your body.

Hold yourself to a higher standard!

You are in charge of what goes into your body makes about 4 servings
Ingredients:

  • 6 cups baby spinach
  • 1 cup pomegranate seeds, from 1 large, fresh pomegranate
  • 1 large orange, peeled and sliced
  • 4 celery stalks, thinly sliced
  • 1/4 cup sliced almonds

For the orange dressing:

  • Juice from one fresh orange
  • 2 Tbsps apple cider vinegar
  • 2 Tbsps olive oil
  • 1 Tbsp raw honey
  • 1 small shallot, minced
  • sea salt and fresh ground black pepper, to taste (about 1/4 teaspoon each)

Instructions:

  1. Combine all dressing ingredients into a small mason jar, place the lid on and shake well to emulsify. (Alternately you may whisk dressing ingredients in a small bowl)
  2. Add all the salad ingredients nicely to a large bowl or platter, starting with spinach on the bottom and building up.
  3. Drizzle dressing over just before serving and toss gently to combine.
