Homemade Buffalo-Style Chicken Meatballs

Meatballs are SUPER POPULAR and very well-received with my 6 teenagers and young adults…if meatballs are cooking in the kitchen, everyone seems to make their way down and hang out, hoping for a sample or two.

Not sure what it is about meatballs, but they do make everyone happy at my house! Yours too?

Garlic, and Hot Sauce all come together to create an ultra-satisfying and super-fun meal idea.

🔥 Get Spicy! Or maybe not?!

If you’re not a fan of the heat, be sure to use a mild buffalo sauce. If you wanna get spicier, use your favorite HOT sauce.

Consider doubling up this recipe so you have some for meal-prepped lunches for a few days.

They stay great in the fridge for up to 4 days and reheat very well.
🌶Oh yes… another thing! If you’re purchasing All Natural Buffalo Style Sauce or Hot Sauce at the grocery store, check out those ingredients!

Should only contain water, vinegar, and spices.

I use Tabasco Buffalo sauce because there are only 5 REAL ingredients in Tabasco. Siete currently offers a great product as well.

Homemade Ranch Dipping Sauce:

1/3 cup homemade mayonnaise
1/2 cup plain Greek yogurt
2 or 3 fresh garlic cloves, pressed
1 Tbsp fresh chopped dill, or 1 tsp dried dill
1 Tbsp fresh chopped parsley, or 1 tsp dried parsley
1 Tbsp fresh chopped chives, or 1 tsp dried chives
sea salt and ground black pepper, to taste

In a large bowl, whisk all ingredients together until well combined.
Cover, and store in the fridge until ready to enjoy.

➡How to Make Oat Flour

Oat flour is the simplest flour to make at home, using whole rolled oats (old-fashioned oats) and your high-speed blender or food processor.
2 cups of whole rolled oats equal about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.

You may have to stop your machine and move the flour around with a spoon.
Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.

🧀Cheese please:

Instead of buying pre-shredded cheese, I like to find a block of grass-fed cheese, or something made locally ON SALE and shred or grate it myself…. or better yet enlist one of the kids for this duty.

Many pre-grated varieties are coated in very strange things (anti-caking & clumping garbage) that interfere with the natural texture and melting quality.

6 servings

Ingredients:

1 ½ lbs ground chicken

1/2 cup freshly shredded cheddar cheese

3 fresh garlic cloves, pressed

1/2 cup almond flour

1/2 cup oat flour (instructions above)

sea salt and ground black pepper, to taste

1 cup mild, medium, or spicy hot sauce, divided

3 Tbsps grass-fed butter or ghee

2 Tbsps apple cider vinegar

crisp fresh carrot and celery sticks, to serve with

homemade ranch dipping sauce, to serve (recipe above)

Instructions:

In a large bowl, combine the ground meat, cheddar cheese, almond flour,oat flour, garlic, half of the hot sauce, sea salt, and pepper.

Mix well to combine.

Using your wet hands, take even spoonfuls and roll between your palms and create the meatballs. I sometimes use a cookie scoop for this step.

Heat the ghee in a large skillet over medium heat.

Cook your meatballs, while consistently turning and flipping until golden brown on all sides and cooked through, about 6-8 minutes.

As soon as your meatballs are finished cooking, stir in the remaining hot sauce and apple cider vinegar.

Serve with your homemade ranch dipping sauce, carrot sticks, and celery, then enjoy!
