Cheesy Meatloaf Cups
Throughout the winter months, our meatloaf recipes become VERY popular here on the website.
I’ve noticed that many people are printing these recipes, and within our private Challenge groups , we see all of your awesome pictures and rave reviews of our current meatloaf recipes – just about every day.

So, I decided to add to our collection and share the recipe and process for these cute lil’ mini meatloaves that we make when we don’t have as much time.
The benefit here is that they bake a lot quicker than a standard loaf pan, so you can get dinner on the table a bit faster.
I’ve found that kids REALLY enjoy these meatloaf cups as well.
They’re more appealing and fun for kids than traditional sliced meatloaf.

Freshly grated cheese from a block will melt the best because pre-grated cheese is coated in preservatives that interfere with the natural melting capability of cheese.
If you don’t want to make your own Ketchup, I’ve recently really enjoyed True Made Foods Veggie Ketchup. It’s surprisingly very good!

Ingredients
MEATLOAF:

2 large eggs, beaten

1 1/2 cups freshly shredded cheddar cheese

1/3 cup homemade ketchup https://ift.tt/u3JaSdL

2 Tbsps minced freshly chopped parsley

2 Tbsps homemade Worcestershire sauce

sea salt and ground black pepper, to taste
-
1 tsp thyme
-
1 large shallot or small red onion, grated
-
4 fresh garlic cloves, pressed
-
2 lbs lean ground beef
SAUCE:
-
1 cup homemade ketchup
-
1/4 cup Dijon mustard or regular mustard
TO SERVE:
Parsnip Mashed Potatoes
Green Beans:
Sauteed Garden Green Beans
Honey Dijon Roasted Green Beans
Pan-Seared + Seasoned Green Beans

Homemade Worcestershire Sauce
Instructions:
Preheat your oven to 350 degrees f.
In a large bowl, add all of your meatloaf ingredients.
Stir very thoroughly to combine everything well. Spray or rub a standard 12-cup muffin tin with avocado oil.
Divide your meatloaf mixture evenly between the 12 muffin cups. Bake for 12 minutes.
Meanwhile, in a small bowl whisk together your sauce ingredients.
Once the time is up, carefully remove from the oven then top each mini meatloaf evenly with the sauce. Then back into the oven.
Continue to bake for an additional 10-15 minutes or until just cooked through.
Allow to cool for a few minutes, then carefully remove from the tin and garnish with additional chopped parsley if desired.
Serve your meatloaf on top of mashed potatoes with a side of green beans.
