Our pumpkin-whipped cottage cheese is an excellent breakfast or snack idea. It has a delicious pumpkin cheesecake-like flavor and a creamy, custard-like texture.
You can top your whipped cottage cheese with all sorts of different toppings – berries and granola make for a delicious breakfast. Try a dollop of coconut whipped cream, dark chocolate shavings, coconut shavings, chopped pecans, and/or cocoa nibs for an indulgent (and nutritious!) treat!

It’s one of those “love it or hate it” kinds of foods.
It’s been up and down the food popularity scale … but it’s always held a top spot on many “healthy foods” lists.
It’s low in calories and fat, high in protein, packed with calcium, and full of nutrients. It’s also a solid source of vitamin B12, selenium, riboflavin, phosphorus, and folate.

Other things to look for on the label: If possible, choose an organic brand from grass-fed cows, with few added ingredients.

Canned pumpkin works great for this recipe, just make sure you don’t accidentally pick up a can of pumpkin pie filling instead because they are two completely different things!
Pumpkin pie filling and pumpkin puree often sit in cans or cartons right next to each other on the grocery store shelf. It can be easy to grab one thinking it is the other because the two products look very similar.
However, they are VERY different products!
Pumpkin Puree (that can also be made at home very easily) should say ONLY Pumpkin on the ingredient label.
Pumpkin pie filling usually has many ingredients, one of which is SUGAR.
Try this with our Homemade Pumpkin Puree.
4 servings
Ingredients:
- 2 cups cottage cheese
- 1 cup pure pumpkin puree
- 1-1/2 tsps pumpkin spice seasoning
- 2 tsps vanilla extract
- 1/4 cup raw honey or pure maple syrup
Topping ideas:
- Granola, coconut whipped cream, dark chocolate shavings, coconut
shavings, chopped pecans, cocoa nibs
Instructions:
Place your cottage cheese, pumpkin puree, vanilla, honey or maple syrup and spices in a whipping bowl.
Mix with an electric mixer until fluffy. Stop several times to scrape down the sides of the bowl.
Divide equally among 4 small cups or jars and add toppings of choice.
