Sausage + Snow Peas Stir-fry (CFC Cold Lunchbox Series)
A huge request this back-to-school (back to the office) season is cold lunchbox ideas to tuck into backpacks or purses that’ll stay good for a few hours until lunchtime and do not require heating.
We’ve spent the past month sharing lots of different lunchboxes/snack boxes to help give you some fun ideas and inspiration to pack great lunches for yourself and your kids.

You can always double up the recipes for bigger appetites or use our lunch box ideas as snacks or post-workout meals.

So is Sausage Healthy?!
Can sausages be included as part of a healthy lifestyle? Absolutely! Especially if you know what to look for:
A very easy rule to follow is to choose sausage with the fewest ingredients, those are usually the healthiest choices.
I always read the ingredients carefully and choose based on that combined with what’s on sale.
It’s a good idea to always check the packaging and look at the sodium content. Ideally, choose the sausage with the lowest amount.
I try to buy chicken or turkey sausages that are mostly the actual chicken or turkey meat, gluten-free, nitrate-free, no added sugar, and no weird stuff in general.
There are actually quite a few good options these days! If you need help be sure to ask your butcher for a recommendation

Recipe:
For 1 lunch box you’ll need:
Ingredients:
- a handful of cherry or grape tomatoes
- 2 or 3 ounces mini mozzarella balls
- 2 fully cooked nitrate-free sausages (turkey, chicken or beef)
- 4 oz fresh snow peas
- 1 tsp olive oil or avocado oil
- 1 Tbsp coconut aminos
- 1/2 tsp sesame seeds
Instructions:
Heat your oil in a skillet over medium-high heat.
Add in the sliced sausages and cook for 3-4 minutes, or until golden brown. Set aside.
In the same preheated skillet, stir-fry your fresh snow peas for 2 minutes until tender-crisp.
Drizzle with coconut aminos and cook a few seconds more.
Allow to cool.
Sprinkle with sesame seeds and assemble your lunchbox as shown.
These do require refrigeration, so throw an ice pack in the lunch box to keep your food safe.
They do NOT require re-heating.
Stays good refrigerated up to 3 days.
