Veggie Hummus Wrap Cold Lunch Box
A big request this back-to-school (back to the office) season is cold lunchbox ideas to tuck into backpacks or purses that’ll stay good for a few hours until lunchtime.
So we’re spending the next month sharing lots and lots of different lunchboxes/snack boxes to help give you some fun ideas and inspiration to pack great lunches for yourself and your kids.
So stay tuned because we have loads of different variations to share with you.
You can always double up the recipes for bigger appetites or use our lunch box ideas as snacks or post-workout meals.
Have fun with these and make them your own depending on what’s in season and what you have on hand.
For 1 lunch box you’ll need:
- 1 veggie wrap, sliced into 1-inch wheels
- 2 oz fresh pineapple chunks
- a small handful of raspberries
- 6-8 pitted olives
- 3-4 cherry or grape tomatoes, chopped
Veggie Hummus Wraps
Recently I’ve really enjoyed Siete brand tortillas and noticed they’re becoming widely available.
For a bit more flavor, try sprinkling your hummus with taco seasoning or add fresh herbs such as basil.
1 serving
Ingredients:
- 1 whole wheat or sprouted wheat tortilla
- 2 Tbsps homemade hummus
- a handful of fresh spinach
- ¼ carrot, shredded or grated
- 1 small cucumber, cut into matchsticks
- 1 oz all-natural cheddar cheese, cut into matchsticks
Instructions:
On a clean cutting board, lay down your tortilla and spread with hummus.
Top with the shredded carrot, baby spinach, cucumber, and cheese sticks. Tightly roll up the tortilla and slice it into 1-inch pieces as shown.
Arrange your hummus wraps together with the fruit, olives, and cherry tomatoes into the sections of a lunchbox.
Stays good for 1-2 days refrigerated or about 4 hours if you need to grab-n-go (no refrigeration).
