Mini Turkey Meatballs + Ribbon Salad (CFC Cold Lunchbox Series)

A huge request this back-to-school (back to the office) season is cold lunchbox ideas to tuck into backpacks or purses that’ll stay good for a few hours until lunchtime and do not require heating.

We’re spending the month sharing lots and lots of different lunchboxes/snack boxes to help give you some fun ideas and inspiration to pack great lunches for yourself and your kids.

You can always double up the recipes for bigger appetites or use our lunch box ideas as snacks or post-workout meals.

💡Have fun with these lunchbox ideas and make them your own depending on what’s in season and what you have on hand.

➡ How To Make Oat Flour

Oat flour is the simplest flour to make at home, using whole rolled oats (old-fashioned oats) and your high-speed blender or food processor.

2 cups of whole rolled oats equal about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.

You may have to stop your machine and move the flour around with a spoon.

Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.

Mini Turkey Meatballs Recipe:

Makes about 40 mini meatballs

Ingredients:

  • 1 lb ground turkey
  • 1 small onion, minced
  • 3 fresh garlic cloves, minced
  • 1 large egg
  • ¼ cup oat flour
  • 3 Tbsps homemade ketchup
  • ¼ cup chopped fresh parsley leaves
  • 3 tsps smoked paprika
  • 1/2 tsp sea salt, or to taste
  • ¼ tsp ground black pepper
  • 1 Tbsp olive oil or avocado oil

Instructions:

In a large mixing bowl add all of your meatball ingredients, except for the oil. Stir really well to combine.

With your clean hands take about 2-3 teaspoons of turkey mixture and form it into a mini meatball. Repeat with the remaining mixture.

Heat your oil in a large skillet over medium heat.

Cook your mini meatballs for 5-6 minutes, gently stirring, or just until golden brown on all sides and cooked through.

Allow meatballs to cool completely before assembling your lunchboxes.

For 1 lunch box you’ll need:

  • Ribbon salad recipe here.
  • 5-6 mini meatballs, cooled
  • fresh melon, cut into cubes or balls
  • fresh blackberries
  • toothpicks for serving

Add toothpicks to your lunchbox for serving along with your berries and melon as shown (or any sides of your choice).

These stay good in the fridge for up to 3 days.

It’s recommended to place your lunchbox on an ice pack when heading out for the day.
