Super Simple, Whole-Food recipe and they are beyond Scrumptious!

Oatmeal is a COMPLEX carbohydrate, that our body uses VERY well for sustainable energy.

If your current goal is weight loss and/or overall health, I strongly suggest that you eat more COMPLEX carbohydrates (yams, sweet potatoes, squash, brown rice, quinoa, oatmeal, etc) and less simple, highly processed carbohydrates such as soda, and white pasta.

We use complex carbohydrates more efficiently.

Simple carbohydrates just do not fuel us the same way complex carbs do.

Complex carbs contain more nutrients than simple carbs. They’re higher in fiber and digest more slowly. This also makes them more filling, which means they’re excellent for weight loss, and weight control.

Complex carbohydrates are THE key to long-term health. They make it much easier to maintain a healthy weight and can even help guard against type 2 diabetes.

Oat flour is the simplest flour to make at home, using whole rolled oats (old fashioned oats) and your high speed blender or food processor.
2 cups of whole rolled oats equals about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.

You may have to stop your machine and move the flour around with a spoon.

Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.

➡   Also, sweetness factor is such a very personal preference, so you may want to use less or more maple syrup/honey, depending on YOUR family’s specific taste preferences.

Makes about 4 servings

Ingredients:

  • 1 3/4 cups oat flour, or ground oats
  • 2 tsps baking powder
  • 1/2 tsp sea salt
  • 1/4 tsp cinnamon, optional
  • 1/2 cup unsweetened coconut milk, cashew milk, or almond milk
  • 1/4 cup melted unrefined coconut oil
  • 2 large eggs
  • 3 Tbsps maple syrup, or raw honey
  • 1 tsp pure vanilla extract
  • fresh berries, to garnish

Instructions:

Preheat your waffle iron.

Combine by whisking together; oat flour, baking powder, sea salt and cinnamon in a large mixing bowl, then set aside.

In another mixing bowl, whisk together milk, coconut oil, eggs, maple syrup and vanilla extract. Whisk until your mixture is creamy.

Next, make a well in your dry ingredients.

Pour your liquid mixture into the well and gently fold until all the ingredients are well combined.

Let your batter stand at room temperature for about 10 minutes.

Ladle about 1/2 cup of the prepared batter into your preheated waffle iron.

Cook the waffles until golden and crisp, about 2-3 minutes.

Garnish with fresh berries and serve immediately with additional maple syrup, or raw honey if desired.
