Green Bean and Bacon Bundles

Another FUN idea for your holiday celebrations or Summer BBQ’S!

Green beans are one of my absolute favorite vegetables, but if they’re not YOUR thing, then try this method using asparagus instead!

Note: There are many high-quality bacon options available these days. Look for nitrate-free, and humanely-raised, if possible. We believe there is a place for everything in moderation, and that we can still live a healthy lifestyle without being ULTRA ridged.

We eat bacon a few times each month at our house because it’s something we (REALLY) enjoy!

Makes about 6 servings

Ingredients:

  • 1-1/2 lbs French green beans
  • 1 Tbsp ghee, unrefined coconut oil, olive oil, or avocado oil
  • 6 slices nitrate-free bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • sea salt and freshly ground black pepper, to taste

Instructions:

Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.

Cut each slice of bacon in half and place on the prepared sheet pan. Bake for about 7 minutes, or until the meat is no longer pink but hasn’t begun to crisp though.

Remove the bacon from the oven. Leave your oven heated to 400 degrees because you’ll use it again.

Meanwhile, heat a large pan over medium heat. Melt the ghee/oil, then add in the green beans.

Sprinkle beans with sea salt, pepper, garlic and onion powder, and add in about 1/4 cup water. Once water starts to boil, lower heat and cover the pan, allowing the green beans to steam until just tender-crisp, about 4-5 minutes.

Don’t overcook as we’ll continue to cook them into the oven with the bacon. Drain well.

Allow beans to cool before handling.

Take about 8 green beans and using a slice of your half-cooked bacon, wrap it tightly along the middle to create a bundle as shown.

Secure tightly with a toothpick if needed.

Place your green bean bundles on the sheet pan and bake for 15-20 minutes, or just until bacon is crispy.

Sprinkle with freshly ground black pepper, and serve immediately.
