A taste of the tropics!
These protein balls are EXCEPTIONALLY great in the Summertime thanks to that fresh lime + coconut combo!
Make sure your shredded coconut is unsweetened.
I REALLY love “let’s do organic” brand of dried coconut.
I think using several key limes instead of a regular lime would be a FUN twist as well!
Makes 12 balls
Ingredients:
- 1 cup raw unsalted almonds
- 1 cup unsweetened dates, pitted
- 1/3 cup unsweetened shredded coconut +2 Tbsps extra unsweetened shredded coconut for coating (“Let’s Do
- Organic” brand is my favorite)
- zest of 1 fresh lime, divided
- juice of 2 limes (aim for 1/4-1/3 cup juice)
- 1/2 cup vanilla protein powder
- teeny tiny pinch of Himalayan sea salt
In a small bowl, pour hot water over the dates, just enough to cover and let it soak until softened, about 10 minutes. Meanwhile, add raw almonds to your food processor and pulse just until finely chopped. Now, drain and squeeze the excess water from the dates and add them to your food processor together with all the rest of your ingredients now.Pulse until things start to resemble sticky cookie dough. Take about a spoonful of mixture, and roll it between your palms to create a ball. Repeat until all dough is used.In a small bowl, combine 2 Tablespoons shredded coconut with half of the lime zest. Roll each of the balls in this mixture, until coated on all sides. Keep your protein balls refrigerated in an airtight container for up to 10 days. Enjoy!
