{NEW} Bacon Wrapped Asparagus
Asparagus season is still going strong here in Utah. Fresh, crisp in-season asparagus is my FAVORITE! Adding bacon..whoa! What a spectacular fun combination to enjoy on occasion!
Early Springtime, to early Summer, is the perfect time of year to enjoy some fresh asparagus!
We actually enjoy handpicked asparagus grown every year on one of my families properties!This is such a quick and easy recipe you’ll wonder why you haven’t tried it before! Word of caution to those who try out this recipe: It’s highly addictive!
We enjoy nitrate free, high-quality bacon a few times each month as a special treat, so I think this is a PERFECT recipe to make for brunch this weekend!
I’ve also included directions for the grill, in case you want to add these to your weekend BBQ plans.makes 6 servings
Ingredients:
- 20 crisp, fresh spears asparagus, rinsed and pat dried
- 20 thin sliced nitrate free bacon strips
Preheat your oven to 400 degrees f. and line a large, rimmed baking sheet with parchment paper. Take each asparagus spear and snap off the very bottom of the woody ends.
Next, take one bacon strip and wrap it around the asparagus nicely as shown.
Place your wrapped asparagus on the prepared baking sheet and repeat with remaining asparagus and bacon leaving space between each so that they can crisp up.
Roast in your preheated oven for 15 – 18 minutes, or until bacon is crispy to your liking. OR, to grill, place bundles on your hot grill and cover. Cook 8 to 10 minutes until bacon is crisp and asparagus bundles are tender, turning once.
