{NEW} Peanut Butter Oatmeal Chewy Bars
These chewy bars are a FUN weekend project to make with the kids! Super YUM, and great to have on hand!
The “sweetness factor” can be adjusted by adding more or less honey/maple syrup since it’s such a personal preference!
I wrap mine in plastic wrap and store in the fridge.
These store great in the freezer too! (lasts in the fridge for 2 weeks, or freezer for 2 months)
Puffed quinoa is available at the health food stores, or Amazon.makes 8 servings
Ingredients:
- 1.5 cups old fashioned oats
- 1/2 cup puffed quinoa (I found mine on Amazon)
- 1/3 cup sliced almonds
- 1/4 cup raisins, golden raisins, or dried cranberries
- 2 Tbsps unrefined coconut oil
- 1/4 cup pure maple syrup or raw honey
- 1/4 cup all natural peanut butter
- 1/2 teaspoon vanilla extract
- 3 Tbsp melted dark chocolate, to drizzle over (optional but definitely recommend)
Instructions:
- In a large bowl, combine oats, puffed quinoa, sliced almonds, and raisins.
- Line an 8×8 pan with parchment paper and set aside.
- In a small saucepan, whisk together coconut oil, maple syrup/honey, peanut butter, and vanilla.
- Heat over low heat just until it starts bubbling, stirring frequently.
- Remove from heat, then pour over the oat mixture in your bowl and stir until well combined.
- Once cool enough, you can even get your hands in there to get these ingredients incorporated really well!
- You might have to add a couple of tablespoons of water to make the mixture stick together.
- Place this mixture into your prepared pan and gently, but firmly press into the pan evenly, making sure to reach the corners.
- Refrigerate overnight.
- Cut into 8 bars and drizzle with melted chocolate as shown.
