Kid Friendly Lunchbox Ideas – 4 Ways
Wellllll, kiddos are ALL Back-to-School…and Moms & Dads everywhere are asking for more lunch ideas.
These are GREAT for kids & their Parents
1. Turkey Club Roll-Up Lunch Box
makes 1 serving each
Ingredients:
- 1 nitrate free turkey club roll-up, sliced into 1.5-inch pieces
- 1/4 cup black pitted olives
- 10 raw almonds
- 6-8 dried apricots
Ingredients for turkey club roll-up:
- 1 Tbsp softened, organic cream cheese OR avocado oil mayo
- 1 (10-inch) whole wheat or sprouted tortilla
- 2-3 leaves romaine or butter lettuce
- 3 slices nitrate-free turkey ham
- 2 slices fresh cheddar cheese
- 3-4 tomato slices
Instructions:
- Lay tortilla flat on a cutting board and spread the cream cheese in a thin layer all the way to the edges.
- Layer the remaining ingredients as follows: lettuce leaves, turkey, cheese and tomato slices.
- Starting at one end of the tortilla, roll tightly towards the filling and all the way until the ends.
- Slice it into 1 1/2′ pieces as shown.
- Arrange into the lunchbox container along with remaining ingredients.

2. PBJ Sandwich Lunch Box
makes 1 serving each
Ingredients:
- 2 PB & jam sandwiches
- 1/2 cup green grapes
- 1 oz. fresh cheddar cheese stars
- 1/4 English cucumber, sliced
Ingredients for PBJ sandwiches:
- 2 slices Ezekiel bread, toasted
- 2 Tbsps all natural peanut butter
- 2 Tbsps no-sugar-added fruit jam
Instructions:
- Using a 3-inch round cookie cutter, cut bread into circles.
- Spread peanut butter on one circle, and strawberry fruit spread on the other.
- Place the 2 circles together and gently press to form a sandwich.
- Arrange the sandwiches into the lunchbox container together with the remaining ingredients.
Enjoy!
3. Chocolate Black Bean Muffin Lunch Box
makes 1 serving each
Ingredients:
- 1 chocolate muffin
- 1/2 cup fresh berries of choice
- 1 hard boiled egg, peeled and cut in half
- 1/4 English cucumber, sliced
- 5-6 cherry tomatoes
- 1 oz. cubed fresh cheddar cheese
Ingredients for chocolate muffins
(makes 6 large muffins, serving size 1 muffin):
- 1 (15 ounce) can black beans, rinsed and drained
- 3 free range eggs
- 1/3 cup unsweetened cocoa powder
- 1/2 cup old-fashioned rolled oats
- 1/2 cup plain Greek yogurt
- 1/4 cup raw honey
- 1 tsp baking powder
- 2 tsp vanilla extract
Instructions:
- Preheat the oven to 350 degrees f. Line a muffin tin with silicone (or paper sprayed with coconut oil) liners or use a silicone muffin tray.
- Place all muffin ingredients in a blender and blend until smooth.
- Pour the mixture into the prepared muffin tin.
- Bake for about 20-22 minutes, or just until a toothpick inserted into the center of a muffin comes out clean.
- Allow them to cool completely, then place one or two chocolate muffins into the lunchbox container, together with the remaining ingredients.
- Refrigerate for up to 3 days.

4. Hummus & Sweet-Potato Lunch Box
makes 1 serving each
Ingredients:
- 1/4 cup homemade hummus
- 10 roasted sweet potato and cheese rounds
- a handful of fresh carrot and celery sticks
- red bell pepper hearts, made using a cookie cutter
For the Hummus:
- 15oz. chickpeas, rinsed and drained
- 1 clove fresh garlic
- 2 Tbsp extra virgin olive oil
- 2-3 Tbsp water
- 2 Tbsp fresh lemon juice
- 2 Tbsp tahini paste
- sea salt and pepper to your taste
Instructions:
- Place all the hummus ingredients in food processor and blend until very smooth.
Instructions:
- Preheat the oven to 350 f.
- Thinly slice the sweet potato and toss with avocado oil or olive oil, sea salt and pepper.
- Place in a single layer on a baking sheet and roast for about 12-15 minutes, or until fork tender.
- Remove from the oven and top each round with cheese, then bake for an additional 3 minutes, or until cheese is melted.
- Allow it to cool completely then pack in lunch box together with the remaining ingredients as shown.
